Happy Thanksgiving!

What am I thankful for on this Thanksgiving Day? I'm thankful for friends and family. I'm thankful that I get to spend this special holiday with family.

 
We spent our holiday at Grandma & Grandpa's. We enjoyed a wonderful Thanksgiving feast and the company of our family. K especially enjoyed Grandma's deviled eggs this year. He had two!



Here is the delicious Zucchini Casserole recipe we had this year:

Goldie's Vegetable Casserole ( Verda Holm George):
2 tablespoons olive oil
2 pounds zucchini, sliced
1 clove garlic, pressed
1 bunch green onions, chopped
1 cup of shredded carrots
1 cup sour cream
1 (10.5 once) can of cream of chicken soup
1 ( 8-ounce) package stuffing mix
( Stove Top, chicken flavor mix)
1/4 cup ( 1/2 stick) butter, melted
1 1/2 cups shredded cheddar cheese

Preheat the oven to 350 degrees

 In a large frying pan over medium heat, heat the olive oil. Add the zucchini, garlic, and green onion and cook until tender. Drain well. Add the carrots, sour cream, and soup to the vegetables and mix well. In a bowl, combine the stuffing mix and seasoning (which come with the mix) and melted butter.

Lightly oil a 9 by 13 inch casserole dish. Spread half of the stuffing mixture on the bottom of the casserole. Spoon the zucchini and carrot mixture on top. Sprinkle the rest of the stuffing mixture on top, and top with the cheese. Bake for 30-40 minutes or until the vegetables are heated through.

We had a wonderful Thanksgiving dinner! Definitely going to make this casserole again!
